The Patient (2022)

Episode Overview

In Mexico, the focus is on incredibly fresh cheese. Rick organizes a cheesemaking session with two local women in the village of Rojas, timed perfectly with the milking of the alfalfa-fed cows. Viewers witness how this super-fresh milk transforms into sweet, soft curds called queso fresco and the tangy, salty quesillo, a staple in many Oaxacan dishes. Back in his Chicago kitchen, Rick encourages everyone to try making fresh cheese themselves. As a delightful reward, he prepares a simple dinner featuring the freshly made cheeses alongside grilled salsas and a garden salad.
